We all know that bees will make honey from the pollen collected during the spring and summer when the flowers bloom every year. In essence, the main ingredients of honey are fructose and glucose, which are sugars that are easily absorbed by the body. After the bees collect nectar, they have to go through a process of brewing honey that is harder than collecting nectar to remove the moisture in the honey. Therefore, the moisture content in the honey is pitifully low. Generally, naturally mature honey only contains 18% of moisture. Therefore, honey is considered a highly concentrated sugar solution.


We know that when the concentration of a solution reaches a certain value, the osmotic pressure inside the solution becomes very high. The solution with high osmotic pressure is not suitable for cell growth. The reason is that the solution with high osmotic pressure will absorb the water in the cell body under the action of osmotic pressure, and the cells will naturally die after dehydration. Therefore, most microorganisms are difficult to survive in honey, and honey without microbial damage is naturally difficult to deteriorate.


In addition, honey is also rich in glucose oxidase, which produces a large amount of hydrogen peroxide when it reacts with the glucose in it. Hydrogen peroxide, also known as hydrogen peroxide, has the effect of eliminating bacteria and poisoning. This also prevents the growth of bacteria in honey from the other side, thereby ensuring that honey does not deteriorate. Although honey can be stored for a long time, you still need to consume it according to the shelf life on the honey jar and do not consume expired honey.
